Bank holidays are a perfect time to spend a little longer over breakfast or try something different. There seems to be a constant stream of new recipes on social media and in magazines for breakfast and brunch so there is certainly no shortage of ideas out there. The tricky thing though can be to find something that appeals to all the family and I don't just mean in terms of tastes and preferences. We are lucky to have a family that is pretty open to trying new things but with two children under six who need plenty of fuelling and two relatively health conscious adults it can be a challenge finding something suitable.
This recipe not only hits the nail square on the head for everyone in our house but it is so quick and simple to make. Sometimes healthier alternatives to traditional recipes don't quite cut it for me but this is hard to beat.
Oat and cottage cheese pancakes
1 cup cottage cheese
1 cup oats
1 teaspoon vanilla extract
Combine all ingredients in a blender to make a smooth batter then cook in coconut oil in a frying pan on a medium to high heat until brown. Serve with honey and blueberries or any topping that you choose. Delicious!
