Saturday night curry

I can honestly say that I have never regretted investing the time in creating a homemade curry and once again this weekend I wasn't disappointed. Inspired by some recipes in this month's Easy Food magazine and by my desire to make a special meal for John and I, I stocked-up with the extras that I didn't have in my store cupboard, ready to get cooking. I enjoy working with ingredients that I don't use regularly in weekday meals and also having the opportunity to take a bit longer to develop something with a real depth of flavour. Preparing the marinade in the morning was a good way to help build-up the anticipation of a delicious dish. Having had a glimpse and a sniff of all the wonderful spices, I couldn't help but look forward to what was coming. The pictures below show the different stages of the Chicken tikka masala that I made and then served with a tasty homemade Indian rice.
