This is a quick dish I threw together last week and it was so tasty I thought I'd blog the recipe. It is by no means authentic Asian cooking as it has a rather eclectic mix of ingredients but it was different, delicious and pretty nutritious too. Serves 2.
2 handfuls of Broccoli
2 handfuls of Green beans
2 handfuls Spinach
1 packet of fresh, cooked Prawns
2 miso soup sachets
1 Star anise
2 tsp Curry powder
3 Kaffir lime leaves (optional)
2 tbsp Dark soy sauce
2 tbsp Sweet chilli sauce
Rice to serve (could use noodles and cook in the broth)
Boil the broccoli and green beans in just enough water to cover them in the pan until almost tender. Whilst they start to cook add the miso sachets, star anise, curry powder, lime leaves, soy and chilli sauce.
Meanwhile cook your rice. I use basmati using the absorption method (cover the rice with about 1cm boiling water, stir, add a bay leaf and put the lid on, on a low heat for about 10 minutes).
Once the vegetables are almost tender add the prawns and spinach. Cook for a few minutes then remove the lime leaves and star anise before ladelling into bowls and adding the rice.
If using noodles add them with the prawns and spinach for the length of time required to cook then serve.
