Who doesn't love pancakes with maple syrup? And a side of bacon and eggs is a well-known and loved accompaniment. But have you considered salmon and eggs? This recipe is another of mine that uses hot smoked salmon and is more about assembling ingredients than really cooking. Super easy! If you like to make your own pancakes I have a recipe for some protein pancakes in an earlier post but this recipe uses shop-bought giant pancakes.
2 giant pancakes
4 Glenballyeamon free range eggs
Splash of milk
Knob of butter
1 fillet of North Coast Smokehouse hot smoked salmon
2 tablespoons of maple syrup
Put the pancakes on to toast.
Whisk the eggs with the milk, butter and seasoning.
Scramble the eggs in a pan to your liking.
Top the pancakes with flakes of hot smoked salmon then drizzle over the maple syrup before topping with the scrambled eggs.
