Breakfast burrito

This is my lighter, fresher take on the popular breakfast or brunch dish. Sometimes things in wraps appear like healthy options. A regular breakfast burrito, which is usually filled with a variety of processed meats, fried potatoes and cheese can be anything but. That's all well and good when it's a treat but what if you'd like to have something like this more regularly and not compromise on healthy eating? This dish substitutes bacon and sausage with smoked salmon and light cream cheese. Fluffy scrambled eggs and crisp vegetables finish it off nicely.


7 Glenballyeamon free range eggs

Splash of milk

Knob of butter

4 large soft tortillas of choice

4 large slices of smoked salmon

4 tbsp cream cheese

4 handfuls baby spinach leaves

Half a pepper

Half a pack of baby plum tomatoes



Cook the scrambled eggs to your liking. 

Place the tortilla flat on the plates you will be serving them on and spread a tablespoon of cream cheese down the centre of each one.

Spread the spinach leaves on the cheese and then place the slices of smoked salmon on top. 

Chop the peppers and tomatoes into small pieces and sprinkle over the smoked salmon. 

Add the scrambled egg to each tortilla and season to taste. 

Roll the tortilla tightly and cut into halves. Serve.
