Day 23 of #65daysofsummer
This is another version of my protein pancakes with a chocolate treat twist. Perfect for a holiday breakfast!
6 Glenballyeamon free range eggs
1 pot cottage cheese
1 cup oats
2 handfuls dark chocolate chips
Coconut oil for frying
Fruit to serve.
Add all ingredients except the chocolate chips to a blender or food processor and mix until it forms a smooth batter.
Add the chocolate chips after blending and stir through.
Heat a small amount of coconut oil in the pain and ladle the batter in to make the pancakes, keeping a close eye on them as the higher sugar content from the banana and chocolate means they can catch in the pan much more quickly.
Serve with blueberries and a little maple syrup. They disappeared pretty quickly tonight!
